Ingredients:
Chicken breast (cut in medium pieces) – 1.5 lb.
Fresh champignon mushrooms (cut in medium pieces) – 0.5 lb.
Step 1 Preheat oven to 430F. Cover 2 small baking sheets with aluminum foil. Step 2 In a small bowl, mix parsley, basil, rosemary, and oregano with ¼ tsp of salt and ¼ tsp of ground black pepper. Step 3 Put the chicken breast on one of the baking sheet and cover with a half of the mixed herbs. Step 4 In a large bowl, mix mushrooms, onion, bell pepper, and garlic. While mixing the ingredients together, sprinkle them with olive oil. Step 5 Put the vegetable mix on the second baking sheet. Step 6 Put both baking sheets into the oven and bake for about 30 minutes. Stir the vegetables once during the baking process. Once the chicken is ready, take it out of the oven and cover it to keep warm. Step 7 To the baking sheet with vegetables, add string beans, tomatoes, white beans, olives, vinegar, and the second half of the herbs mix after the 30 minutes of baking. Mix it all well and bake for another 15 minutes. Step 8 Mix the chicken with vegetables. Serve and enjoy!
