Recipe Details:
Beef steak cooked with green chimichurri sauce and vegetable salad that is dressed with the same sauce is a great diabetic-friendly entrée with delicious and unique taste.


Ingredients:
  • Beef steak (tenderloin preferably) – 1 lb.
  • Salt and ground black pepper – to taste
  • For the Chimichurri sauce:
  • Parsley (leaves only) – 1 bunch
  • Cilantro (leaves only) – 1 bunch
  • Lime juice – 5 tbsp.
  • Red wine vinegar – 2 tbsp.
  • Olive oil – 1 tbsp.
  • Garlic – 3 cloves
  • Hot red pepper (of your choice) – 1 pinch
  • Salt – to taste
  • Water – 1 tsp.
  • For the salad:
  • Whole wheat bread (cut into cubes) – ½ lb.
  • Cherry tomatoes (cut in halves) – 25
  • Rucola – 1 cup
  • Red onion (cut into thin feathers) – 1
    Recipe Directions:
    Step 1
    Make diamond cuts on both sides of the steak. Salt and pepper the meat on each side and let it sit for 5 minutes.
    Step 2
    Put all the ingredients of the Chimichurri sauce in a blender and grind until smooth.
    Step 3
    Grill the steak for 10 to 13 minutes until the desired doneness is reached. Turn the steak once in the middle of cooking process.
    Step 4
    Cover the steak with 2 tbsp. of Chimichurri sauce on all sides and fry the steak in the sauce for 5 more minutes.
    Step 5
    Make croutons: Fry the whole wheat bread in a dry frying pan until crisp.
    Step 6
    Combine cherry tomatoes, arugula, red onions, and croutons in a deep bowl. Add the chimichurri sauce and stir the salad well.
    Step 7
    Cut the steak into slices and serve on a salad cushion.
