In this tasty diabetic-friendly recipe, a beef steak is perfectly fried and baked and then topped with fried tomatoes.
Step 1 Sprinkle the beef steaks with salt and pepper and fry in a large cast iron skillet, in hot olive oil, for 5 minutes on each side. Step 2 Preheat oven to 350 F. Put the fried steaks on a baking sheet and bake in the oven for 6 minutes. Step 3 Remove the steaks from the oven and let them cool for 10 minutes. Step 4 Sauté the minced garlic over low heat with two tablespoons of olive oil in the same pan where the meat was fried. Step 5 After about 2 minutes, add the cherry tomatoes and thyme to the garlic. Stir carefully to make sure you don’t crush the tomatoes. Step 6 As soon as the tomatoes begin to wilt (in about 2 minutes), remove them from the heat and place them on plates along with the steaks and basil sprigs. Serve hot and enjoy!
