Broccoli soup is very nutritious and diabetic-friendly while being delicious and easy to cook.
Ingredients:
Broccoli (divided into inflorescences) – 14 Oz
Walnut oil – 2.5 tsp.
Almonds (ground) – 1/3 cup
Sesame seeds – ¼ cup
Salt, ground black pepper, cumin, thyme, nutmeg – to taste
Step 1 Boil some water put almonds in there for a few minutes. Peel the almonds and grind them in a blender. Step 2 Boil a pot of water. When water starts boiling, put the broccoli in there. Cook until tender (approx. 5 minutes). While broccoli is cooking, add salt and spices. Step 3 Place the boiled broccoli into the blender and start grinding while little by little adding the broth in which the broccoli was cooking until you get the desired consistency. Step 4 Serve to plates. Add walnut oil, then add the ground almonds and sesame seeds on top. Bon appetit!
