Step 1 Quickly fry the liver in a hot frying pan so that it remains moist inside. Step 2 Fry the onion in 1/3 of butter over low heat until light brown. Step 3 Combine liver and onion, add wine and sherry vinegar. Fry until liquid evaporates. Then add honey and caramelize. Step 4 Pour in ¾ cup of cream and evaporate half. Cool down and mix with a blender. Step 5 Add salt and remaining butter. Turn on the blender at maximum speed and mix until the temperature of the mass rises to 75 degrees. Rub through a sieve, then cool down. Step 6 Whisk remaining cream until soft and mix using a spatula with the liver pate. Serve and enjoy!
