This beautiful green pea soup is creamy, diabetic-friendly, easy to make, and very tasty as well.
Ingredients:
Frozen green peas – 1 lb.
Vegetable broth – 1 liter
Leek (thinly cut) – 7 stalks
Potatoes (peeled and cut in medium pieces) – ¾ lb.
Step 1 Peel and crush 2 cloves of garlic with the flat side of a knife. Step 2 In a large saucepan, heat 2 tbsp. of vegetable broth, garlic and leek. Cook for 10 minutes, stirring continuously, until leek is soft. Step 3 Pour in the remaining broth and 3 cups of water, add chopped potatoes and green peas. Bring to a boil, then reduce heat and simmer, covered, until vegetables are tender (about 15 minutes), then cool. Step 4 Beat the soup in a blender, warm it up, add the mint, and serve immediately.
