This diabetic-friendly sushi roll is very light, since it doesn’t have any rice in it, but full of flavor!
Ingredients:
Cucumber (long) – 1
Fresh salmon (cut into thin strips) - 70 g
Fresh yellowtail fish (cut into thin strips) – 70 g
Step 1 Cut off both ends of the cucumber. The center part should be about 3” long. Step 2 Using a sharp knife, carefully remove the skin from the cucumber, making sure that the skin comes off as a single sheet, about 6” long. ( The cucumber sheet should resemble a nori sheet.) Step 3 Dry the cucumber skin with a paper towel. Step 4 Spread the cucumber skin on a piece of plastic food wrap. Step 5 Spread a strip of cream cheese on the cucumber skin, leaving about 1” of cucumber skin from the end closest to you empty. Then put the pieces of avocado, the strips of salmon and yellowtail, and the pieces of scallion on top of the cream cheese. Step 6 Start rolling up the cucumber sheet from the end close to you, using the plastic wrap the same way you use a sushi mat. Once you make the sushi roll, keep rolling it up in a few more layers of plastic wrap. Make sure to roll it up tight. Step 7 With a sharp knife, slice the roll into 5 pieces without removing the plastic wrap. Step 8 Carefully remove the plastic wrap from each slice of sushi. Serve and enjoy!
