Step 1 Whisk the egg whites until fluffy. If you wish, add salt and ground black pepper. Step 2 Heat olive oil on a non-stick frying pan over medium heat. Add onion and sauté for 4 minutes. Step 3 Add beans and garlic and sauté for 2 more minutes. Add the tomatoes and make sure they lie right on the bottom of the frying pan. Fry for 2 more minutes. Step 4 Turn over the tomatoes and then immediately pour in the egg whites mix. Reduce heat and cook while stirring for about 3 minutes until the egg whites set well. Add ground black pepper to the omelet and serve.
