This delicious diabetic-friendly appetizer is a perfect start for a holiday dinner.
Step 1 Cut the eggplant into ½” thick slices. Step 2 Peel the avocado and put the avocado pulp in a deep bowl, then mash it with a fork. Step 3 Add the minced garlic to the mashed avocado. Then add cream cheese and squeeze lime juice into the bowl. Add salt and mix well. Step 4 Ina separate bowl, mix vegetable oil and almond flour. Then dip the eggplant slices in the oil and flour mixture and put in a pre-heated frying pan. Step 5 Cook the eggplant for 5 minutes then turn them over. As soon as the other side is browned, turn over again and cover. Cook over medium heat for 5 more minutes. Then put the eggplant slices on a plate and let them cool. Step 6 Cut the tomato into slices 1/3” thick. Step 7 Build the appetizer as follows: Spread the avocado mix over 3 eggplant slices. Put a tomato slice on top. Then put another eggplant slice on the tomato. Spread the avocado mix on that eggplant slice. Put a tomato slice on it and finish with the third eggplant slice. Step 8 Fry 3 eggs sunny side up. Carefully put one fried egg on top of each eggplant slice. Serve and enjoy!
