Pumpkin fried with garlic is a diabetic-friendly light and tasty side dish that perfectly complements any meat entrée.
Step 1 Peel pumpkin, cut into rectangular pieces (about 3/4” by 1.5”). Step 2 Melt the butter in a frying pan, add the pumpkin pieces and fry on one side. Step 3 Turn over to the other side, put garlic on each piece of pumpkin. Fry until the other side is ready. Stir everything before removing from heat. Serve hot. Enjoy!
