Recipe Details:
A combination of tofu, eggplant and bell pepper give you a delicious and savory diabetic-friendly dish!


Ingredients:
  • Firm tofu (cut in medium pieces) – 1 lb.
  • Eggplants (cut into medium pieces) – 1 lb.
  • Garlic (finely chopped) – 2 cloves
  • Soy sauce – 4 tbsp.
  • Vegetable oil – 3 tbsp.
  • Bell pepper (cut into medium pieces) – 1
  • Sweetener – equivalent of 2 tbsp. of sugar
  • Basil – ¼ cup
  • Oyster sauce – 3 tbsp.
    Recipe Directions:
    Step 1
    Heat vegetable oil in a wok over high heat. Add tofu and fry until golden brown, turning. Then put the tofu on a plate with a skimmer.
    Step 2
    Put the garlic, eggplant, and bell pepper in the wok. Fry until soft (about 10 minutes).
    Step 3
    Add sweetener, soy sauce and oyster sauces. Cook, stirring, for 2 more minutes.
    Step 4
    Return the tofu to the wok and stir.
    Step 5
    Remove from heat and stir in the basil leaves. Stir and serve. Bon Appetit!
