This salad gives you a delicious combination of grilled and fresh vegetables. It is filling but light and can be a great addition to any diabetic-friendly dinner.
Ingredients:
Medium eggplant (cut into slices) – 1
Bell pepper – 2
Medium tomatoes (thinly sliced) – 4
Fresh cucumbers (cut in cubes) – 2
Garlic (chopped) – 3 cloves
Spinach, parsley, or other greens of your choice – 1 bunch
Step 1 Peel and spread the peppers. Grill the peppers and eggplant until grill marks are formed. Put the peppers in a bag and let them sweat, after what remove the skin from the peppers. Cut the peppers and eggplant into small pieces. Step 2 Finely chop the spinach and parsley and add the chopped garlic. Step 3 In a large bowl, mix the grilled vegetables, fresh tomatoes and fresh cucumbers. Add salt and pepper. Step 4 Mix lemon juice and olive oil together. Pour half of the mix into the salad. Stir thoroughly and place the salad on a salad plate. Put pieces of mozzarella cheese on top. Step 5 Pour the rest of the lemon juice and olive oil mix over the salad. Enjoy!
