This diabetic-friendly carrot and orange salad with spices is an authentic Moroccan dish with an interesting blend of flavors.
Step 1 Peel the orange wedges from the films and cut each wedge in half. Then place the orange pieces on a sieve and put the sieve over a bowl to drain the orange juice. Step 2 Add lemon juice, cinnamon, cayenne pepper, cumin, and salt to the bowl with the orange juice. Beat with a whisk until the mix becomes smooth. Step 3 Add the orange slices, raisins, and grated carrots to the bowl with the whisked mix. Step 4 Cover the bowl with a lid and shake. Leave for about 5 minutes until liquid drains to the bottom of the bowl. Step 5 Place the salad on a sieve to drain the excess liquid, then put in a fridge for an hour before serving. Step 6 Preheat oven to 350 F. Arrange sesame seeds in a single layer on a baking sheet and bake for about 10 minutes, until golden brown and fragrant, stirring occasionally. Step 7 Take the salad out of the fridge. Sprinkle with the roasted sesame seeds, chopped cilantro and oil, then sprinkle with black pepper to taste. Serve and enjoy!
