A diabetic-friendly, light, very aromatic, and easy to make soup based on chicken broth and tomatoes.
Step 1 Fry onions in a deep saucepan in olive oil with grated ginger, ground cinnamon, and cumin. Fry until a strong smell of fried onions and spices is present, but make sure not to burn the onion. Step 2 Add the finely cut tomatoes to the onion. Pour in the chicken broth, then add honey, one teaspoon of chopped parsley, one teaspoon of chopped cilantro, salt and pepper, bring it all to a boil, reduce the heat and simmer for about 10 minutes, stirring occasionally. Step 3 Remove the soup from heat and chill in a sink filled with water and ice. Then pour a tablespoon of lemon juice into the soup, throw in the rest of the chopped cilantro and parsley, mix and pour into plates, putting a thin slice of lemon or lime in each. Bon Appetit!
