Here is a recipe for a diabetic-friendly and quick to make breakfast – an omelet with vegetables, cheese and herbs.
Step 1 Break the eggs into a bowl, beat them with a whisk until smooth. Step 2 Add milk, dill and parsley. Mix well. Step 3 Heat vegetable oil in a frying pan. Fry the zucchinis on both sides over medium heat until soft. Step 4 Add the egg mix to the frying pan. Then put the tomato and mozzarella on top. Step 5 Cover the pan with a lid and cook over low heat for 10-13 minutes until there is no liquid on top of the omelet. Serve and enjoy!
