Step 1 Put the cottage cheese in a bowl. Step 2 Break the eggs and separate the egg whites from the yolks. Put the egg whites to the beating bowl and the yolks to the bowl with the cottage cheese. Add vanillin to the cottage cheese. Step 3 Mix the cottage cheese with the yolks using a fork or a blender. Step 4 Mix the raisins with the cottage cheese. Step 5 Add a pinch of salt to the egg whites and whisk them with a hand blender or mixer until stiff peaks. Step 6 Put the whipped egg whites to the bowl with the cottage cheese and carefully stir them into the mixture with a spoon. The cottage cheese mixture becomes more liquid and lighter. Step 7 Cover the split baking form with a thin layer of butter and sprinkle with semolina. Then put the cottage cheese mixture into the form and smooth the surface with the back of a spoon or a spatula. Step 8 Preheat oven to 355 F. Bake the cottage cheese casserole for about 30 minutes. The casserole rises a lot, but after you take it out of the oven, it will go down again. Step 9 Let the casserole cool a bit, then put it to the plate and garnish with fresh mint leaves.
