These tended, juicy and diabetic-friendly veal meatballs are full of flavor. Try this recipe – your family and guests will be delighted!
Step 1 Grind the veal in a meat grinder using a coarse cutting plate. Step 2 Add the chopped garlic and scallions to the ground meat. Step 3 Put the diced celery into a saucepan. Cover with boiling water, then bring to boil again. Remove from heat and put aside for 5 minutes. Step 4 Add the celery, chickpea flour, paprika, salt and pepper to the ground meat. Mix well then put in a fridge for half an hour. Step 5 Preheat oven to 400 F. Cover a baking sheet with wax paper. Cover your hands with olive oil and roll the meat mix into meatballs (approx. the size of a ping pong ball). Place the meatballs on a wax paper covered baking sheet. Make sure the meatballs don’t touch each other. Step 6 Bake the meatballs for 20-25 minutes. Serve hot. Use any diabetic-friendly sauce of your choice.
