Step 1 Put the meat in a deep bowl. Chop 3 cloves of garlic and put on the meat. Mince the remaining 3 cloves of garlic and put in a small container. Step 2 Peel off 2 oranges in a spiral. Cut 1 unpeeled orange into slices. Step 3 Squeeze juice out of 3 oranges and 1 lemon, pour over the meat and marinate, turning occasionally, for 3 hours. Step 4 Add honey and Herbes de Provence seasoning, to the small container with the minced garlic and mix. Remove the meat from the marinade. Salt, pepper and coat with the honey and garlic mixture. Step 5 Preheat the oven to 395 degrees. Put the meat in a baking sheet and place in the oven, pouring the remaining marinade from time to time over the meat. Bake for about 1 hour 40 minutes. Cover the meat with orange circles and peels about 20 minutes before cooking is complete. When the dish is ready, remove from the oven, serve hot and enjoy!
