Recipe Details:
This is a super delicious and aromatic beef stew braised in red wine and beef stock, flavored with a bit of bacon and vegetables. This diabetic-friendly dinner entrée definitely deserves a place on your dinner table!
Ingredients:
Stewing beef (chuck. Wash and cut into medium pieces) – 2 lbs.
Step 1 Heat olive oil in a frying pan. Fry the bacon in olive oil until golden brown in a Dutch oven. Remove the ready bacon from the frying pan with a slotted spoon and put aside. Step 2 In the Dutch oven, where the bacon was prepared, fry the beef in portions until golden brown. Do not fry all the meat at once to make sure it gets the golden brown crust and not stewed. Pull the ready beef aside together with the bacon. Step 3 In the same Dutch oven, fry the carrots and onion for about 5 minutes, stirring occasionally. Step 4 Add the beef and bacon to the carrots and onions. Add the flour. Then add salt and pepper to taste, mix well and fry for 5-7 more minutes. Step 5 Add the beef broth and wine to the meat. Step 6 Preheat oven to 375 F. Add the bay leaf, tomato paste and minced garlic to the meat. Cover and bake in the oven for 2.5 hours. Serve and enjoy!
