This is a diabetic-friendly recipe for one of the most common dishes of the Mexican cuisine.
Step 1 Heat oil in a frying pan and fry the chopped onion in it until soft (about 6-7 minutes). Step 2 Add chili, cumin and minced garlic to the onion and fry for 30 seconds, then add strained beans and ½ cup of water, mix well, cover and simmer for 5 minutes. Step 3 Remove the lid, mash the beans with a potato masher. You do not need to turn the beans into a smooth puree. It is enough to mash about half of the beans. Continue simmering for another 3 minutes, stirring constantly. Step 4 Remove the beans from heat, season with salt, chopped cilantro and lime juice. Step 5 Heat oil in a clean frying pan and fry the ground beef for 5 minutes. Add beans and fry, stirring occasionally, for a couple of minutes. Season with salt. Step 6 In a dry frying pan, heat the tortillas for half a minute on each side. Place grated cheese, meat with beans, diced tomatoes on warm tortillas. Fold the top and bottom ends of the burritos, then twist them up. Serve and enjoy!
