This diabetic-friendly summer salad is filled with juicy peaches, grilled chicken, tomatoes, Dijon mustard, pine nuts, and other ingredients that make this easy to make salad so delicious.
Step 1 Make marinade: IN a bowl, mix orange pepper, mustard, honey, soy sauces, and oyster sauce. Step 2 Marinate the chicken in this mixture for 10 minutes. Step 3 Wash and dry the lettuce and basil. Tear the salad with your hands and finely chop the basil leaves. Leave several leaves to garnish the salad. Put the lettuce in a large salad bowl. Step 4 Cut the peaches into cubes and place them in the bowl with the lettuce. Then, mix the basil with olive oil and season the salad. Step 5 Cut the cherry tomatoes into 2 or 4 pieces. Step 6 Heat the olive oil in a frying pan and fry the chicken breast over high heat for 4 minutes, stirring occasionally. Make sure your chicken is completely cooked and keep in mind that the marinade can burn during cooking. Step 7 Put the ready chicken fillet on a paper towel to remove excess fat. Step 8 Put the peaches and lettuce leaves on a plate, then place the tomatoes and chicken slices on top. Step 9 Sprinkle pine nuts on the salad, garnish with basil leaves, serve and enjoy!
