Ingredients:
Duck breast (skin on, cut into medium pieces) – 1 lb.
Step 1 Pass the duck meat, onion and garlic through a meat grinder. Leave the skin on – the fat will melt perfectly during frying, and will make the cutlets tender and juicy. Step 2 Remove the crust from the bread and soak the bread in milk. Step 3 Squeeze the milk out of the bread and add to the meat. Also add the egg, semolina, breadcrumbs, salt and pepper. Step 4 Mix well and beat the minced meat with your hands so that it becomes homogeneous and fluffy. Form the cutlets. Step 5 Heat the vegetable oil in a skillet and fry the cutlets on both sides until golden brown. Serve hot and enjoy!
