Step 1 Grease the pieces of beef with olive oil, then sprinkle with salt, pepper and spices of your choice on both sides, spreading them evenly with the palm of your hand. Step 2 Tie the meat with a string around the perimeter so that the meat keeps its shape and does not fall apart. Step 3 Fry the meat in a hot frying pan, on both sides until a crust forms (about 1-2 minutes). Step 4 Preheat oven to 390 F. Put the beef on a baking sheet and bake the meat in accordance with the desired doneness: 7 minutes for rare, 10 minutes for medium, 15 minutes for well done. Step 5 Pour the cream into a saucepan, add pepper, salt and sweetener to taste and stir. While stirring, evaporate 1/3 or 1/2 to make the sauce richer and denser. Step 6 Remove the finished meat from the oven and put on plates. Drizzle with the creamy pepper sauce on top of each piece of meat. Garnish with a sprig of thyme and mint and with cherry tomatoes cut in half. Bon Appetit!
