Fish casserole with rice is a great, diabetic-friendly options for lunch and dinner. You can use any fish fillet, while fatty fish such as salmon, mackerel, cod, or tilapia are among the better choices.
Ingredients:
Fish fillet (cut in medium slices) – 1.5 lb.
Rice – 2
Carrots – 2
Fat-free sour cream – 3 tbsp.
Low-fat, low-sodium cheese (grated) – 3.5 Oz
Onion (finely chopped) – 1
Tomato (sliced) – 1
Vegetable oil, salt, and ground black pepper – to taste
Step 1 Put slices of fish fillet, carrots and onions into a frying pan and fry for 10 minutes. Add some water and spices and simmer until ready. Step 2 Boil rice and evenly place the half of it on the bottom of a deep baking pan. Step 3 On top of rice evenly spread sour cream, then put the fish on top. Step 4 On top of fish, put the second half of the rice, then slices of tomato, and then cheese. Step 5 Preheat oven to 350 F. Bake the casserole until golden (about 15 minutes). Take out of the oven, serve, and enjoy!
