Step 1 Break the eggs into a large bowl, add milk, cheese, basil, salt and pepper. Stir with a fork or a whisk. Step 2 Heat olive oil in an oven safe skillet. Fry the bell pepper and onion over medium heat until soft (about 5 minutes), stirring occasionally. Step 3 Add the garlic and fry for 30 seconds. Step 4 Add spinach, fry for 30 more seconds, while stirring. Step 5 Add the egg mix to the skillet with vegetables. Cook, stirring with a spatula for 30 seconds. Step 6 Preheat oven to 360 F. Place the skillet in the oven and bake an omelet with cheese and vegetables for about 9 minutes. The omelet should increase in volume. Step 7 Remove the frittata from the skillet and put it on a plate. Let it sit for 5 minutes, then serve and enjoy!
