This diabetic-friendly salad gives you a delicious combination of oven baked cauliflower, crispy onions and juicy apple. These ingredients make the salad a great option for a lean or vegetarian dinner.
Ingredients:
Cauliflower – 1 lb.
Apples (peeled, core removed, cut each apple into 4 pieces) – ½ lb.
Step 1 Divide the cauliflower into small inflorescences. Remove dense stems. Put the cauliflower inflorescences into a salad bowl. Step 2 Add the diced onions to the cauliflower. Step 3 Cut the apple pieces into small cubes and add to the cauliflower and onion. Step 4 Add vegetable oil to the bowl, then add salt and pepper. Mix well. Step 5 Preheat oven to 360 F. Place the content of the salad bowl on a baking sheet covered with baking paper. Bake in the oven for 40 minutes. Stir 3 times during baking. The cauliflower should get a little brown. Step 6 Remove the cooked dish from the oven and put in a bowl for serving. Sprinkle with chopped dill and dried cranberries if desired. Serve and enjoy!
