Recipe Details:
Shrimp cocktail is a very common appetizer. Nevertheless, more often than not, shrimp cocktails are made of ingredients that people with diabetes should rather avoid. The recipe you see here is not only tasty, but diabetic-friendly as well.
Step 1 Peel the celery and cut into small pieces, then boil it in salted water for about 20 minutes until tender. Step 2 Mash the celery into a puree with hot vegetable broth, paprika, curry, and olive oil. Beat the puree with a mixer until homogeneous and fluffy consistency. Step 3 Stir in some onion and bell pepper. Add chili and salt if desired. Step 4 Remove the dark vein along the back of the shrimp. Boil the shrimp in salted water with peppercorns for 3 minutes. Step 5 Pour the celery puree in glasses. Put the mix of bell pepper and onions on top. Place 2 shrimp in each glass and serve. Bon appetite!
