Step 1 Remove 1/2 teaspoon of zest from the orange using a grater. Step 2 Peel the oranges and divide them into wedges. Remove the thin skin. Step 3 Cut the peeled orange wedges into long thin slices, while holding the wedges over a bowl to preserve the dripping orange juice. Step 4 Lightly fry the sesame seeds in a dry frying pan. Step 5 Combine shallots, orange juice, orange zest, rice vinegar, mustard, olive oil, sesame oil, and salt in a large bowl. Mix until emulsified. Step 6 Add spinach, oranges, scallions, sesame seeds, and walnuts to the bowl with the dressing. Stir well. Step 7 Serve to plates. Sprinkle with pomegranate arils and enjoy!
