In this diabetic-friendly recipe, chicken is first pan-fried, then bake in the oven. The combination of wine and spices gives the chicken a delicate aroma and unique flavor.
For this recipe, you can use either a whole chopped chicken or any specific parts of chicken that like, such as breast, thighs, or legs. Step 1 In baking dish, put the sprigs of thyme and rosemary. Step 2 Heat olive oil in a frying pan. Cut the chicken in pieces and fry for 7 minutes. Step 3 Fried pieces of chicken put in the baking dish, on top of the rosemary and thyme. Step 4 Melt the butter in a sauce pan. Put tomato and garlic in a saucepan with oil, add wine and vinegar. Cook over low heat for 7 minutes. Step 5 Pour the content of the sauce pan into the baking dish with the chicken. Add salt and pepper. Cover the baking dish with aluminum foil. Step 6 Preheat oven to 390 F. Put the baking dish in the oven and bake the chicken for an hour. Step 7 Remove the aluminum foil and continue baking chicken for 10 more minutes. Step 8 Serve the chicken with any side of your choice. Enjoy!
