Recipe Details:
In this diabetic-friendly recipe, chicken is first pan-fried, then bake in the oven. The combination of wine and spices gives the chicken a delicate aroma and unique flavor.


Ingredients:
  • Chicken – 1.5 lb.
  • Tomato (diced) – 1
  • Fresh rosemary – 3 sprigs
  • Fresh thyme – 3 sprigs
  • Butter – 2 tbsp.
  • Olive oil – 3 tbsp.
  • White wine – ½ cup
  • Wine vinegar – 2 tbsp.
  • Garlic (cut into thin slices) – 2 cloves
  • Salt and ground black pepper – to taste
    Recipe Directions:
    For this recipe, you can use either a whole chopped chicken or any specific parts of chicken that like, such as breast, thighs, or legs.
    Step 1
    In baking dish, put the sprigs of thyme and rosemary.
    Step 2
    Heat olive oil in a frying pan. Cut the chicken in pieces and fry for 7 minutes.
    Step 3
    Fried pieces of chicken put in the baking dish, on top of the rosemary and thyme.
    Step 4
    Melt the butter in a sauce pan. Put tomato and garlic in a saucepan with oil, add wine and vinegar. Cook over low heat for 7 minutes.
    Step 5
    Pour the content of the sauce pan into the baking dish with the chicken. Add salt and pepper. Cover the baking dish with aluminum foil.
    Step 6
    Preheat oven to 390 F. Put the baking dish in the oven and bake the chicken for an hour.
    Step 7
    Remove the aluminum foil and continue baking chicken for 10 more minutes.
    Step 8
    Serve the chicken with any side of your choice. Enjoy!
