Step 1 Heat some olive oil in a frying pan over high heat. Wipe the tenderloin steaks dry with a paper towel, put them in the frying pan and cook for 4 minutes until golden brown. Step 2 Turn over the meat and fry for 4 more minutes. Step 3 Remove steaks from heat, put it on a sheet of foil, season with salt and pepper on both sides. Wrap in foil and leave in a warm place. Step 4 Make the sauce: Heat a skillet over medium heat. Fry the finely chopped shallots in butter until soft. Add dried cherries. After 2 minutes, pour in the broth, add the frozen cherries. Cook until half of the liquid has evaporated (that will take about 6-10 minutes), then add the thyme. After a couple of minutes, the sauce is ready. Step 5 Put the meat on plates, pour the sauce over the meat. Serve and enjoy!
