Healthy and juicy salad with kiwi, avocado, Brussels sprouts, and cucumbers is a true delight! Sesame oil and seeds give this diabetic-friendly salad an oriental flavor.
Ingredients:
Brussels sprouts (cut into quarters) – 2 cups
Medium avocado (cut into cubes) – 1
Small cucumber (cut into cubes) – 1
Kiwi (peeled and diced) – 1
Scallions (chopped) – 1/3 bunch
Cilantro (chopped) – 5 sprigs
Parsley (chopped) – 3 sprigs
Sesame oil – 2 tbsp.
Lemon juice – 1-2 tbsp.
Salt – to taste
Dried cranberries and pomegranate arils (optional; for serving)
Step 1 Put the Brussels sprouts in a saucepan, cover with water, bring to a boil, and then cook for 3 minutes. As soon as the Brussels sprouts are ready, immediately cool them in ice water so that the Brussels sprouts don’t lose their bright color. Step 2 Put the peeled and diced kiwi in a salad bowl. Step 3 Sprinkle the avocado cubes with lemon juice so that the avocado does not darken. Step 4 Put all the ingredients in a salad bowl, season with sesame oil and salt, and mix well. Step 5 If desired, sprinkle with pomegranate seeds and dried cranberried. Serve and enjoy.
