Recipe Details:
This diabetic-friendly recipe gives you delicious spaghetti with avocado zucchini, garlic and fresh basil sauce.


Ingredients:
  • Whole wheat spaghetti – 3.5 Oz
  • Zucchini (grated into thin strips) – 1
  • Avocado (peeled; pit removed) – 1
  • Fresh basil – 1 bunch
  • Garlic (cut in half) – 1 clove
  • Salt – to taste
    Recipe Directions:
    Step 1
    Pour 2 liters of water into a saucepan and add salt. Bring water to a boil and place the spaghetti upright in a saucepan.
    Step 2
    Wait a few seconds and completely submerge the spaghetti into the water. Cook the spaghetti over medium heat until cooked according to the instructions on the package.
    Step 3
    Make the spaghetti sauce: Put the peeled and pitted avocado into a blender bowl. Then add garlic and basil leaves. Then grind the avocado, garlic, and basil for 4-5 minutes.
    Step 4
    Fry the grated zucchini in a dry frying pan over medium heat, stirring constantly, until the zucchini are lightly browned and tender (about 5 minutes).
    Step 5
    When the spaghetti is ready, drain it in a colander.
    Step 6
    Mix the spaghetti with the fried zucchini and the just prepared spaghetti sauce. Serve and enjoy!
