Step 1 Preheat oven to 430 F. Step 2 Slice the zucchini lengthways into 0.5 inch strips. Pour lemon juice over them and put the zucchinis aside for 15 minutes. Step 3 Put wax paper on a baking sheet. Place the zucchinis on wax paper and sprinkle them with olive oil. Step 4 Bake until golden brown (about 20 minutes). Then, let the zucchinis cool. Step 5 Mix together the cottage cheese, garlic, and basil. Add ground black pepper and lemon zest. Step 6 Brush every strip of zucchini with the cottage cheese mix and then make rolls. Serve immediately or let the zucchinis sit in a fridge for a few hours to become more flavorful. Enjoy!
